The week of September 27, 2021 I had the opportunity to join long-time friend and beer industry mentor Tamar Banner, Head Brewer at To Øl Brewing, Denmark, for 2021 Hop Selection at Crosby Hops and Yakima Chief Hops. Because of COVID-19 travel restrictions, no one else from her team was able to make the trip, and she reached out to me to be “an extra set of nostrils”. It was an incredible opportunity for some focused sensory work and to learn from someone with Tamar’s extensive experience and depth of knowledge.
